Homemade rhubarb syrup

1 litre | 25 minutes

A simple, flavorful rhubarb syrup perfect for adding to cocktails, mocktails, or homemade lemonade.

Ingredients

  • 1 bunch of rhubarb (500 g)
  • 400 ml sugar
  • 1 litre water
  • 1 tbsp vanilla paste (or seeds from 1 vanilla pod)

Instructions

Remove the leaves from the rhubarb and cut the stalks into bite-sized pieces.

Place them in a saucepan with sugar, water, and vanilla.

Bring to a boil and simmer for 20 minutes.

Let the syrup cool completely at room temperature, then strain through a fine sieve.

Store the rhubarb syrup in a clean jar in the fridge and use it in cocktails, mocktails, or homemade lemonade.
